No Bake Peanut Butter Bars
These little darlings taste just like a real Reese cup!! Reina made them the other day and none of us can stop eating them. My oldest daughter is allergic to peanuts so she made a batch for her with soy butter and they came out wonderful as well!!
Here is the recipe that Reina used. If you are allergic to peanuts just replace the peanut butter for soy butter 😉 She kept the recipe the same for all the other ingredients.
2 cups finely ground graham cracker crumbs
2 cups powdered sugar
1 cup melted butter
1 cup + 4 tablespoons peanut butter
1 1/2 cups semi-sweet chocolate chips
In a large bowl, combine the graham crackers, 1 cup of peanut butter, and powdered sugar.
Add the melted butter. Mix well. Spread evenly in the bottom of an ungreased 9×13 inch pan. **Reina put wax or parchment paper on the bottom of the pan and it made it so easy to just lift out once it was refrigerated and time to cut.
In a microwave safe bowl, melt the chocolate chips and 4 tablespoons of peanut butter. She did this by microwaving for 30 seconds at a time, and then mixing, and then another 30 seconds, mixing, and then another 15 seconds. Once it is smooth and melted spread the chocolate over top of the peanut butter mixture evenly.
Refrigerate for about 30 minutes, and then cut the bars evenly. ** You could even use cookie cutters and make shapes if you wanted to.
Store in the fridge in an airtight container. We had ours in the freezer, and they thaw out and taste just as delicious!
